The elusive search for happiness. What makes you happy? For me, it is the simple things. I know so trite but so true. My cats, (4 rescue kitties and yes I am a kooky but sweet cat lady), music (listening to Laura Marling right now), painting, drawing, YOGA, healthy food.
Here is a happy heart soup recipe.
kale, broccoli, carrots, peppers, eggplant, cherry tomatoes, low salt tomato paste, garlic, fresh herbs, quinoa, pinto or black beans.
coat pan with grape seed oil. chop garlic and carrots finely. then put them in the pan. stir. add kale and cubed eggplant. stir add a little more grape seed oil. Boil water and add quinoa. then add low salt tomato paste and fresh herbs to pan.
Before quinoa is fully cooked add the vegetables to the soup and beans (washed off to get rid of excess salt. Add a tiny pop of onion powder. Voial! a delightful happy heart soup.
